    We were first introduced to Chambord as a float on top of a Whiskey Sour at a bar in Portland, Oregon. It was one of those “Ah ha!” moments when we experienced one of our favorite drinks completely transformed with just a touch of another spirit. Over the years Chambord has popped up as an ingredient in many drinks we’ve had and each time it’s been the spirit that has really made the drink shine.     When it comes to spirits backed by celebrities, we typically have pretty low expectations. Great spirits don’t often come out of vanity companies that rely on the notoriety of the celebrity, more than what’s in the bottle, to sell. It’s a lot like bacon vodka - people will buy it because of the notoriety and be very forgiving about the quality (or lack thereof). Good brand marketing and interesting bottles sell (just look at Dan Aykroyd’s Crystal Head Vodka, which pushes both celebrity brand AND bottle design to sell). Danny DeVito’s Premium Limoncello Original is a notable exception to the general mediocrity of this category.     When it comes to herbal liqueur there are a lot of options out there, but many are either very bitter (like Green Chartreuse and Cynar), very strong (like Jägermeister and Killepitsch), or both (like Fernet Branca). J, Witty Spirits enters this space with an Organic Chamomile Liqueur that is distinctively different with a much lighter and feminine flavor profile. J Witty Spirits Organic Chamomile Gourmet Liqueur (40 proof, $24 for 375ml) is perhaps the longest named spirit we’ve reviewed yet. My first reaction to nosing it was, “Wow, that smells nice.” It has a very beautiful and sweet chamomile nose with cinnamon spice and an undercurrent of honey.
